Cooking with Karlee: July 8, 2017

When I saw Ree Drummond from Pioneer Woman make her chocolate cake recipe, she called it “The Best Chocolate Cake, Ever,” and I thought, “I wonder if I could make it even better?”  I added my own twist to it, and I have to say, it turned out awesome. The original recipe is listed below, and you can make my version by adding 1/4c of regular Coca Cola to both the cake and frosting, right after you add the cocoa.

Cake Ingredients

2c flour                                  

2 sticks butter                        

1tsp baking soda

2c sugar                     

1c boiling water                                 

1 tsp vanilla

¼ tsp salt                   

1/2c buttermilk                                  

1/4c Coca Cola          

4 heaping Tbsp. cocoa           

2 whole beaten eggs

Frosting Ingredients

½ c finely chopped pecans    

1 ¾ stick butter                      

4 heaping Tbsp. cocoa                       

1/4c Coca Cola

6 Tbsp. milk                          

1 tsp vanilla               

1lb powdered sugar (minus ½c)

Directions

In a mixing bowl, combine flour, sugar, and salt

In a saucepan, melt butter. Add cocoa, and stir well. Add boiling water and allow it to boil for thirty seconds, then turn off the heat. Pour your hot mixture over your flour mixture, and stir lightly.

Pour buttermilk in a measuring cup, and add beaten eggs, vanilla, and baking soda to it. Stir buttermilk mixture into butter/chocolate mixture.

 

Pour into greased and floured sheet pan and bake at 350 degrees for twenty minutes

 

Frosting: Melt butter in a saucepan. Add cocoa, stir to combine, then turn off heat. Leave on stove, and add pecans. Stir to combine. Pour over freshly baked cake.

Cut cake into squares, and enjoy the Best Chocolate Cake Ever with friends and family!

 

I like to dress it up with a scoop of vanilla ice cream drizzled with chocolate syrup.
