Cooking with Karlee: Back-to-School Apple Cupcakes and Photo Submissions

With students heading back to school is just around the corner, I thought I would do a back-to-school treat. I found a great recipe for apple cupcakes on Pinterest, and although they are certainly not as healthy as the real deal, they are so cute and perfect for any back-to-school celebrations.

I would love to see your back-to-school cupcake creations, so please post pictures to The Richmond Observer’s Facebook page!

What you will need for the cake:

1 box yellow cake mix

1 cup water

1/2c vegetable oil

3 eggs

What you will need to decorate:

Red or green sprinkles

Small tootsie rolls (Cut in half to make stem)

Leaf candy mold (find these at craft stores or www.shopbakersnook.com)

Green candy melts

Vanilla icing

Step 1: Bake your cake as directed on the box and let cool.

Step 2: Frost your cupcakes with vanilla icing.

Step 3: Pour your sprinkles onto a plate and gently roll the top of your frosted cupcakes into the sprinkles.

Step 4: Press your tootsie roll stem into the center of the cupcake. You can also use a pretzel stick for the stem if you prefer.

Step 5: Place your leaf beside the stem. You need to press gently to secure the leaf, but don’t press it as deep as the stem.
